Quinoa salad with salmon and bimi

I really like the taste of quinoa! Quinoa are small seeds of the Quinoa plant and have a bit of a ‘nutty’ taste. It can be used as a substitute for rice or couscous for example. It’s high in protein, vitamin B2, vitamin E and minerals such as iron, copper and magnesium.

One way to use quinoa is to cook it. The cooked quinoa can be used in salads, in a porridge or as substitute for rice or couscous. It’s also possible the sprout the quinoa! The sprouted seeds are an awesome addition to a salad or as topping on a smoothie! (See also my post about sprouting legumes)
