White bean burgers and asparagus salad

I’m enjoying my spring break and that means that I have a lot of time to spend in the kitchen! Time to experiment and try out some new things! I’ve been thinking about making beanburgers for a while, but so far it just never happened. Somehow it always seemed a lot of work to me, I think? But that’s not an excuse at the moment! So today was the day I made my first beanburgers! Turned out to be not so much work as I thought it would be 🙂 And I already found a new recipe which I’d love to try soon: Green Ketchup Burger by Kyra de Vreeze.

White bean burgers:

  • 100 grams of white beans
  • tbsp of finely chopped chive
  • 5 grams of chickpea flour (or any other flour) and a bit more to crumb the burgers with.

Preheat the oven to 180 degrees celcius. Puree the white beans, I did this by using a fork. Mix in the chopped chive and the chickpea flour. Make 2 burgers with the mixture. Cover them with the rest of the chickpea flour, so they don’t feel sticky. Put in the oven for 10 minutes, turn the burgers and put in the oven for another 10 minutes.

I had a green salad with asparagus and mixed mushrooms with the white bean burgers. It’s the season of the white asparagus here in the Netherlands, but they’ll be on the menu later this week! Today I could not resist these beautiful green asparagus! I grilled them and I stirfried the mushrooms. On top of some mixed lettuce and just a drizzle of truffle infused olive oil and some salt & pepper as a finishing touch! Yummyness!
