Herby Couscous salad

Home alone tonight and after a day of work I didn’t feel like standing in the kitchen for a long time so I decided to go for a simple but tasty couscous salad with whatever ingredients I had left in stock! Luckily I had some coriander, parsley and mint in the fridge, those 3 go perfect in a couscous salad and I just love fresh herbs! I kept it easy and simple on the veggies; just a bunch of cherry tomatoes and heaps of onion.

Herby Couscous salad

  • 50 grams of couscous (uncooked)
  • 1 large onion or 2 smaller ones (in chunks)
  • 100 grams of cherry tomatoes (halved)
  • 1/2 tsp Ras-el-hanout (Moroccan herb mix)
  • 1 tsp honey
  • butter or oil
  • heaps of fresh herbs: coriander, mint and parley (finely chopped)
  • tbsp pinenuts.

Heat a little oil or butter in a pan and fry the onion on a low to medium heat, together with the honey and the ras-el-hanout. Let simmer for about 15 minutes. In the meanwhile prepare the couscous following the directions on the package. In this case I used the quick-and-easy way: just soak in hot water, cover with some foil and after 10 minutes the couscous is ready! Chop the cherry tomatoes in half and add to the onions in the pan.
In a bowl, rake the couscous with a fork and add the little butter if you like. Stir in the fresh herbs, mix well. When ready, add the onion and the tomatoes. Roast the pinenuts in a dry skillet and add to the bowl.

ps. More time to do some grocery shopping? Add a grilled zucchini or grilled eggplant!
Want some meat? Add some lambsmeat! Lamb goes really well with couscous and the ras-el-hanout is my opinion!
