I think biggest part of your nutrition should be plantbased. Plantbased food is best digested by us humans and it provides us with loads of important vitamins and minerals. Plantbased food is high in fiber and stimulates a good digestion. Plantbased food makes you feel ‘light’ whereas a lot of aminalproducts or highly processed food can make you feel ‘heavy’, ‘bloated’ and ‘stuffed’. That feeling of an ‘after-dinner-dip’ after having a heavy meal… Did you know that this feeling arrises because your body has to work hard to proces the animalproducts and processed foods? Veggies on the other hand are much easier processed by our body, therefore your body can put more effort in extracting the beneficial nutrients out of our food!
Lately I’ve been trying to incorporate more veggies in the morning for breakfast! Why wait with eating your veggies until dinner, while you can also have them for lunch or even breakfast! Earlier I’ve posted a few ideas to start your day with a fair amount of veggies. For example the Asian-style of breakfast with a Miso soup! Or the green-potion-like breakfast smoothie with spinach and of course the Is-this-really-veggie-breakfast-chocolatemousse! But today a totally different breakfastdish: pancakes with chocolate! And I promise; it doesn’t take you a lot of time to make this yummy breakfast dish!
Pancakes with chocolate? How could that be healthy, I hear you say? Well, I’ll tell you!
The pancake base is made of buckwheat flour (which is actually not a grain but a seed). Buckwheat has the positive effect that it doesn’t raise your bloodsugar that much and contains lots of nutrients. Besides the buckwheat I only added water, some finely chopped onion (yes, really! Hello veggies!) and a dash of lemonjuice.
The main ingredients of the chocolate ‘Nutella’ spread are avocado (Hello veggies agian!) and (raw) cacaopowder. The avocado adds a bunch of healthy fatties to your breakfast dish and gives you a saturated feeling. Avocado’s are perfect for smooth spreads and by adding the cacaopowder you can give it a real chocolatty-taste, ain’t that just AWESOME?! So don’t be scarce with this chocolate ‘sauce’, just spread it abundantly onto your pancake and make it a chocolate party! Because chocolate and strawberries are a heavenly combination I had to top the pancake with some fresh strawberries, now they are widely available and taste super delicious!
Pancakes with guilt free ‘Nutella’ spread
For the pancakes:
- 50 grams of Buckwheat flour
- 1/4 of an Onion, finely chopped
- 85 ml of Water
- 1 tbsp of Lemon juice
Mix all the ingredients into a batter. Heat a little oil in a skillet. Add the mixture when the oil is hot. Turn the pancake when the underside is firm. Note that buckwheat won’t color as much as regular flour does, it remains quite ‘pale’. Place the pancake on a plate when ready.
For the ‘Nutella’ spread:
- 1/2 Avocado
- 1 tbsp of Ricesyrup
- 1 tsp of Lemon Juice
- 1 tsp of (raw) Cacaopowder
- pinch of Cayennepepper (optional)
Put all the ingredients in a cup and blend into a smooth paste with the handmixer. Spread it out all over the pancake. Finish it off with some fresh fruit of your preference. I used strawberries, but I bet raspberries or blueberries will make this dish to a fabulous breakfast party as well!
