Zucchini Boats filled with Tuna

The best dishes are simple dishes =)
This is a dish I make quite often because it’s simple and it’s yummy!

Zucchini Boats filled with Tuna (1 person)

  • 1 zucchini, sliced in half horizontally and deseeded.
  • 1 can of tuna
  • 1 tbsp of red pesto
  • 2 tomatoes (dices in small pieces)
  • 1 onion
  • spring onion
  • salt and pepper
  • grated cheese or mozzarella (optional)
  • olive oil

Preheat the oven to 200 degrees Celcius. Slice the zucchini horizontally in two halves. Scrape out the seeds by using a spoon. Mix the tuna with the pesto, onion and tomato. Add a little salt and pepper to taste. Fill the zucchini with the tuna mixture. Sprinkle a little olive oil on top. Place the zucchini boats in an oven dish. Top with some cheese if you like.
Put in the oven for about 20-25 minutes. Cover with some aluminium foil to prevents the dish from burning, if necessary.
