I’m currently fulltime at home since I’m on maternity leave. 40 weeks and 1 day today! So the past few days I haven’t been doing so much but waiting for the baby to announce herself… But I think it’s still too comfy inside my tummy 😉
I must admit that the last couple of days my daily schedule is a bit messed up; sleeping ins, naps in the afternoon and off to bed early… Saving energy maybe??
At least all the waiting gives me plenty of time to prepare nice meals and search for yummy recipes! But in the morning I don’t want to spend too much time making a breakfast, so a smoothie is a perfect start of the day for me: it’s easy to prepare, it’s tasty (well.. there are some exceptions to this rule…) and you can easily start the day with your first batch of fruit and veggies!
- 1 banana (optional; take a frozen banana for a nice, cold, smoothie)
- 1/2 cucumber
- juice of 1 orange
- 1/2 avocado
- handfull of mint leaves
- 100 ml coconutmilk
- 200 ml of water
- optional; add a splash of agave sirup or a tsp of honey
Add all the ingredients to your blender en blend until smooth. Poor in a large glass or jar and enjoy!
